Recipe | Happy 3rd Birthday - Candy Cake for Ma Bicyclette

Ma Bicyclette content hasn't been continuous, what with life getting in the way, but this year we are on it! Today is the 3rd birthday of Ma Bicyclette and it's time to celebrate! We made the most fun candy cake and we're sharing the recipe - because you deserve to treat yourself!

The candy cake is a lot easier to make than you'd think! So let's start with the basics -

Cake
We used an ordinary sponge cake recipe but you can do any kind of cake you like! Make 4 cakes so you have enough to create the hole for your sweets or chocolate!

Meringue Frosting
Beat 200g egg whites, 320g caster sugar and 1/4 teaspoon vanilla extract in a heatproof bowl over a pan of simmering water for 7 minutes - or until stiff peaks form and the frosting is thick and glossy.

Now here comes the fun part!
  • Once your cakes have cooled, cut a hole in the middle of 2 of your cakes, keep the other two whole.
  • Build your tower so the holey cakes are sandwiched in the middle.
  • Before you put the top cake in place, fill the hole with all kinds of goodies. We used skittles, rainbow drops and maoams to make it colourful!

Decorate your cake with whatever treats you like - we did a bicycle adventure theme with some lasercut bikes and a rainbow belt as a road!
